Soy Sauce
I use dark soy sauce, full salt. It gives more meaty flavour and again that sensation called umami – the beautiful (makes sucking noise) flavour given by soy sauce, parmesan cheese, sun dried tomatoes, cooked mushrooms and various meaty broths.
It does have a lot of salt in it, so be aware of that if you are tempted to add more.
